Fried Sauce Potatos (Sambal Goreng Kentang)

ingredients:

  • ½ kg potatoes, peeled and cut into cubes, wash and drain 
  • 1 banana board, remove the skin and cut in half 
  • 2 cm galangal, digeprek 
  • 2 pieces of orange leaves 
  • 1 bay leaves 
  • 1 stalk lemongrass, digeprek 
  • 2 tbsp tamarind water 
  • 1 tablespoon brown sugar 
  • 200 ml coconut milk 
  • cooking oil for frying and sauteing to taste

Subtle seasoning
  • 7 red chilies 
  • 6 red onions 
  • 3 cloves of garlic 
  • 1 tomato 
  • 1 cm ginger 
  • 4 items hazelnut 
  • ½ tsp salt or to taste 
  • ½ tsp chicken-flavored broth powder or to taste
How to Cook :
  1. Heat the oil and fry the potatoes until golden brown, remove and drain. 
  2. Saute ground spices, lemon grass, lime leaves, galangal, bay leaves and banana until fragrant. Enter the coconut milk and add the brown sugar and tamarind water and stir well. 
  3. If the milk has been shrinking, enter fries and stir constantly until the sauce is smooth and dry.
